You see plenty of threads on various sites where hops go well together.......

A couple of brews I do use Target. It is a bit of a thug when it comes to the taste department, however it does mellow with time. What would be a good alternative for it as a bittering hop?

Strychnine

(sorry - couldn't resist)

Amarillo Gold - with the added benefits of a wonderful aroma

I used to use Northern Brewer @ 10.9% AA as my standard bittering hop but think the bitterness is a little too astringent, and have started using Aurora @8.1% instead which is a mellower dual purpose hop, (now I've finished the job lot of Northern Brewer I'd bought)
