Hi!

Just putting together a christmas brew. I'm after something earthy with freshly tilled field kind of aromas, or wet grass and trees, or something a lot less poetic and more delicious but along the same lines, not sure what hops to go with. At the moment I've got (for a 23L length, 60 min boil):

  • Fuggles 30g, 60 mins[/*:m:2kwv3fu3]
  • Northdown 30g, 0 min aroma[/*:m:2kwv3fu3]

I'm completely new to hops, really, I've only used the a bit of saaz cascade and hallertauer before, and have no idea what the British ones are like. Can anyone help?
 
I think you have it pretty nailed really. Fuggles are a bit earthy and perhaps a touch floral. Northdown can be described as being similar to fuggles.

Goldings are a much more fruity, brighter ,spicy hop ideal for summer beers
