I'm planning on doing a beer using 4kg of dark dme and possibly extra sugar. Aiming for 7.8% or so.

I'll be using an extract for bittering as I have no time for full brewing. But will be keeping it fairly punchy. Probably start at 70 or 80 IBU and add more to over 100 if it seems to need it.

I'm going to add 250g of some sort of hop for a few days at the end. But not sure what.

Anyone got any suggestions for a big hitter that would do well with this beast?

Or any general suggestions?

With the bittering and hop additions are you looking to make an imperial black IPA?
Just wondering...you say you would add more bittering extract if it needs it...how?
I think the perception of bitterness would probably be negligible at those levels.
Hop for this.... Amarillo,cascade, centennial...

Yeah something like that. But probably a tiny bit lighter in colour.

The hop extract is just a liquid that you pour in. So I'd just add enough to take me to 70 or 80 and then see if I need more.

I was thinking about using Columbus (or whatever other names it goes by)

On my to do list is a clone of the Kernel’s Export India Porter, mainly because I love Bramling Cross and that’s all they use in their recipe. It could be a good option for you.
