Hop sugestion??

Eh up.

My Dronfield Full Nelson is not to everyones taste as it is single hopped with Nelson hops. Therefore it has all the wine tones that you would expect.

I wanted to brew another pale, but wanted an English hopped brew that would appeal to a wider audience (I have a 150 guest do to cater for), what would you suggest?

Northdown?
Bramlin Cross?
Goldings?
 
Bramling Cross is often said to have an "American" flavour profile so I suggest you avoid.

Having said that I am now going to suggest you add mellow citrusy hops such as pilgrim and styrian - try Twickenham Ales' Naked Ladies.

Of course northdown is also a great hop, and again you can finish with styrian (see Skinner's Betty Stogs).
 
I need to keep it nice and simple and a good session ale. What about...

For 25 litres.

Pale malt 4.5kg
Flaked Maize 250 gms

Mash for 60 mins at 66.6 degrees, stepped to 70degrees for the last 15 mins

Then hopped

Northdown A.A 8.1. 15gms at full 90 mins
Pilgrim A.A. 10.1. 10gms at the hour
Pilgrim A.A. 10.1 30gms in the last 10 mins


This should have OG 1042 final of 1011
Based upon efficiency of 70%
Bitterness of 34.3 IBU
Colour 4.3.

I can then scale it up for the Big Boys Toy, adjusting for efficency of 75%....160 litres (4, 9 gallon kegs)... :drink:
 
I think you could try equal amounts of northdown and pilgrim throughout the boil maybe.

Do let me know how you get on though as I'm liking your style and I like to have a sessionable ale on keg.
