Will it work ok if I buy a premium beer kit like st peters ipa and add 1 kg of honey? Will this end up to sweet or will the yeast be able to cope with a little extra alcohol ?
Would I be better adding the honey to a 1 can kit ?

Not sure about the 2 can kits as they already contain a fare bit of fermentables in
them. Just done a John Bull IPA one can kit and added jar (340g) of honey as well as DME
and some extra hops. Took the advice and on here and added it to a bit of crystal
malt that I had steeped and seived first then added the honey and heated this too.
Have to be careful (so i'm told) of the wild yeasts and bacterias that can be present in
honey I believe.
Anyway hoping to achieve something akin to a waggledance type beer! A kilo of honey
seems like alot not sure the yeast would be able to cope with all the sugar present!
I'm sure someone will be along shortly with more technical info than me - personally
i'd plump for a one can kit and a little less honey - maybe 500g and 500g spraymalt!
