Hi,

I have some Woodfordes Norfolk Nog, this Sunday it would have been in the fermentation bucket 2 weeks. The box the brew came in said it would be ready in 4 to 6 days. There is new white fresh froth has apeared on the surface today and a few bubbles coming up to the surface. My hydromitor (sorry spelling) :oops: is reading i think 1014 tin says fixed under 1014 but it has stayed the same reading for 3 days now.

I am confused totally. Internet research siad the bubbles could just be air but could this cause the froth?

I'd say its ready to bottle or keg :D but I am not sure on the froth you mention but with the hydro reading being consistant over three days i'm sure its finished fermenting so would not worry about the froth :thumb:

Does it matter how long you keep the beer in the fermentation barrel after fermentation?
 
I personally try to get mine out of a fermenter between 10 & 14 days.

There is some talk of a risk of an off flavour called "yeast bite" if you leave it longer than 14 days, there is also talk of it being better for a beer to leave it to do some "cleaning up" - it comes down to what works for you.

Personally I generally get them kegged 10 - 14 but have left beers for 3 to 4 weeks and they have been fine.
