High initial SG

Carrot wine today.
1800g carrot
900g sugar
Added 750g of sultana instead of 340g !!
Citric acid 2 tap

Not added yeast yet. Temp is cooling down from 34° at the moment.
Took a SG reading at it's so high.
See picture.

Advice please.

So....
Started 10 April
It's been racked three times
Finings added 8 August
Looks pretty clear now
Today I tried a small sample and...... a bit rough. Not off. Strong carrot flavor, surprise surprise.

8 months old now. What should I be expecting / doing?
Still in the demijohn. definitley not fermenting.
