Greetings and salutations!,

I've dived in and gone straight to the dark side. Haven't a had a drop of alcohol for 6 years and then last year I was in Sheffield, stepped into the pub on the station and felt immediately like Homer Simpson in the chocolate shop. Oh. My God. A long, long bar of pumps and not one of 'em a fizzy. I walked cautiously up and down, spotted an I.P.A. with a vaguely Indian name and for no good reason other than that I asked the barman for a pint of Jaipur. Upon drinking it, the revelation came to me that life is short and often cruel and one should strive to enjoy the good things and that most certainly includes ale.

Months later, a mission is underway and thanks to this forum I found hints and then a recipe for Jaipur look-a-like. So, thanks to Sara's Bombay IPA recipe, I now have a brew that is shaping up very nicely thankyou. God, but the smell of the brew in the boiler when the hops went in would make a dead man c*m. It was immense. I've had a laugh trying to keep the FV to 20c though because of the hot weather. It's on the hard floor in the coldest room in the house and still won't go below 22c. So it's nearly through to 1010 after 3 days. The SG at start was 1048, Sara starts at 1052. So I didn't get the extraction rate right which is good because it gives me something to work at next time.

I will try another batch of Bombay and then onto a stout because that's what Irish water is made for apparently. Question: why is Ireland bereft of good beer? Why no microbreweries?

congrats on your first brew- and for going ag straight away. That's what I would advise tbh.

Where abouts are you based? I'm in Belfast and have just recently gone AG. Did a wheat beer first to give me something quick to drink. planning a strong belgian golden, a chimay red clone and a westmalle tripel clone next. i'm a sucker for belgians!

haven't found too many online here frm n.ireland which is a pity- would love to start a homebrew club!

Have a couple of questions and have perused site for relevant threads but no joy (yet!....probably there somewhere!).

Freezing your hops. What do you do when you need, say, 40g from the 80g you have in you have frozen? Thaw it out and take what you need and then re-freeze, cos I thought you couldn't keep freezing and thawing more than once? Or do you break off frozen hops to your desired quantity, thaw these out and go? I'm presuming you don't chuck chunks of frozen hops on your boil?

What is best practice these days for bottling? Does everyone rack from FV into secondary vessel or rack straight to bottle? And do you prime, which depends on FG I know.....?

The brew has settled down nicely just above 1010, still bubbling slightly. Temp. is now 18 so am letting it drift on....It tastes amazing already!

great 1 on your brew , even now its done ,best leave it about 3 more days (unless its been sitting for 2 weeks etc )to help the yeast clean up brew and help against off flavours (as the yeasts does its thing) then when bottle best results is to batch prime , you get your sugar and about a pint of water and boil for 5 to 10 mins then when cooled to room temp add it to fresh FV then syphon beer on top of sugar water then give it a gentle stir (no splashing) then transfer to bottles straight away .
As for freezing hops i just pop em in freezer then a week or so later the're ok to just use and they come apart fine and just pop packet back in freezer , maybe you have your freezer too high ?
