With today's Sunday roast we had the last bottle of the only WOW I've done.
I started it in July 2011, bottled towards the end of September.
It was Ok, but I never really liked it much - quite a bitter edge to it when young.
Anyway, at nearly 2 years old it was quite acceptable - can't quite bring myself to call it good.
Given that so many people have great success with WOW, I know it must be something I did that made it below par.

Where did I go wrong?
Coz I might be making another soon(ish)
 
I find that too much tannin can make them a bit bitter, and tanin powder as opposed to tea works better for me. If I'm doing a wow style that I eant to drink straight away I don't allways add the tannin or go for 1/4 of a teaspoon. I do find that there is a noticeable difference at the 3 month mark where the wine develops a bit more depth and the flavour rounds off a bit too.
