I produce about 50 galls of wine each year and like to experiment. Most of my wine is given away to friends and family who send requests for the wines they prefer, as you do. Over the past five years I have been experimenting with Herb wines which have proven to be the most requested. Even more than the previous favourites which were Rice, Sloe, Elderberry, Mixed fruit and Beetroot. The popularity of the herb wines stems from the additional health giving properties.
I've had to turn most of my garden over to growing herbs for wine, and contrive recipes.
The most popular is Lemon Balm wine, mainly because of its restorative qualities. After a couple of glasses you awake feeling wonderful. Lemon Balm has other health giving effects which can be viewed in most Herbals.
Borage wine was a big hit. Reportedly keeps you up all night with no adverse effects. Various Tea wines also popular.
Obviously ONLY USE HERBS NORMALLY USED IN FOOD RECIPES AND BEVERAGES.
