Hi all
This is my Proper Knob http://www.thehomebrewforum.co.uk/viewtopic.php?f=14&t=7824

It was in the primary for a week (it had stopped fermenting) and now in the secondary for a week. It started fermenting again - albeit very slowly, one bubble every few hours or more. It has cleared at the top but not at the bottom (exactly as it was in the primary).

I thought I'd sample a little as I was worried about an infection and it tastes ..... ok (ish). It is a little 'bready' and it tastes pretty strong - as in high alcohol. I can't take a reading as I can't find my hydro anywhere.. but look at this (this was drawn off the bottom via the tap)....

All advice gratefully received. (The yeast is S-33, first time I've used it)

First thought Tony was it could be atmospheric at that rate of bubbling, but to be honest mate the brew looks very cloudy. Could using the drum tap disturbed the crud when pouring.
Think I'd leave it and see what's the reading in a few days with the hydrometer.

15 days should have dropped it clearer than that.

you have got wheat malt in there and their protiens do form a haze as with Weissbier but you used what 6%.

Could try finning it and see if that helps.

Thanks folks
It could be that I'm just too used to using S-04. I did a brew last weekend which I've just racked into secondary - it's totally clear with S-04.

I was careful not to disturb when I ran off .. and even though the FV is milky plastic, I can see that the bottom hasn't cleared. There is wheat malt in there, but I always bung a bit of wheat in and it's never done this before. Think I'll leave it another week and was considering bunging a few campden tabs in with some finings....?

Update: Went to check on this one having bottled it last week and noticed that it had 90% cleared in the bottle (I gave up on it last weekend and bottled it thinking that it was probably lost).

This is pretty damn close to PJ .. maybe a little more 'citrussy' but a lovely beer. Can't wait until it's properly conditioned!
