Help - my wow goes cloudy in the fridge!

Help - this has happened to me a few times now.

I follow the wow recipe and mainly this is hugely successful but on the odd occasion it goes from sparkling clear and overnight in the fridge it goes cloudy again and it's just happened to a batch that I have just completed.

Filtered a wow that had been racked and left for 3 weeks after stabalising and finings added - it was already extremely clear so I did a final filter with vinclear filter added another campden and stored in a 5l pet. It was positively sparkling and clear.

Put into the fridge and overnight it's gone cloudy...any ideas?? This has happened twice to me before now and no idea why. Have a filtered sparkling rose wgj / rgj eady too and now scared to chill it in case the same happens!!!

Any help would be really appreciated.

My guess is that you are getting a pectin haze. If you only have a few bottles it may not be worth doing anything about it. But to fix the problem you would need to add pectolase and let it clear. But it is difficult to cure at this stage. How much pectolase did you add at the beginning?
 
You're getting a chill haze, which is due to proteins.

What yeast did you use?

Try one of the super yeast compounds which contain bentonite, and in this instance try to serve your wine cool but not cold, if it warms up by a few degrees it should clear again.
 
Yes, apparantly bentonite can be used to remove protein haze as a fining agent but can take a couple of weeks to clear it.
Protein haze does not affect flavour.
