Hi font of all knowledge. I am brewing a Festival kit, Razorback IPA I have brewed their other kits before. My question relates to fermentation, it is at a steady temperature of 23 degrees and has been in the fermenter now for 23 days and still the bubbles come about every 2 -3 minutes. The gravity reading has not changed for 3 days. What would your advice be in regards to bottling? Should I wait for the bubbling to stop completely.

or 3 day to be sure .. @ 23c the bubbles could be some of the co2 that had dissolved in the brew while it was cooler, warmer beer will n ot contain as much co2 as cooler beer will.

A gravity reading is the only way to be sure and as Gosdog says a consistent reading close to target FG spanning 2-3days is the only way to be sure. bubbling thru an airlock is only an indicator of activity, not a guarantee ;)
 
Thanks for the advice. I am very new to brewing. The fg reading has been stable over last three days @ 1.004 I was just surprised at how long it has taken. The last two Festival kits have fermented out in just over two weeks.
I'll check it again tomorrow just to be sure. Thanks again.
 
sounds like its ready to me ;) get into the habit of taking gravity samples and drinking tasting the sample too, the change from sweet to green to mature is an interesting process to monitor.
 
I agree with Fil,23 days in the FV and at 1004, you're good to bottle. Great tip about the dissolved co2 being released from the beer.

I have just checked it again and it is still @ 1.004 so I shall bottle it later. I had a little taste and lots of hops, lovely.
The ABV is much higher than is suggested my starting gravity was 1.058 so that calculates at around 7% if my sums are correct.

Then I have another brew ready to get going. :drink:
