Okay, I brewed AG2 today and it is a Best Bitter, that I hope will be nice! I am using St. Austell Proper Job yeast that was skimmed off by a fellow brewer, who had used it in a stout. Got the thing out of the fridge (about 350ml in a drink bottle) and it has been warming up most of the day.
I put my STC-1000 probe in it, sterilised with HPPA, and suddenly there is **** loads of activity and it is going mental in the bottle. It has totally re-mixed with the wort it had separated from and there is lots of activity.
What should I do? Shall I put my wort in the FV in my brew fridge and just leave the yeast to stop what it's doing? Will it harm it? Could it just be a reaction to the HPPA? Do I need new yeast?
