I've just joined, found the site by accident at my mates' earlier looking for recipes for Chilli Wine, or even if such a thing existed! There's some guy got some ideas and I wanted to suggest some ideas. I'll have a look to see if I can find him!
I've been brewing maybe seven years now. I brew beer from a kit, Cooper's Australian* being my very favourites. Wine I make from scratch, doing seasonal wild fruit wines (well, OK, I do often pillage the grocer's for special offers & chuck those in as well!). I like to try international flavours too, I've just bottled a gallon of Japanese Rice Wine and some pineapple & coconut, an idea I got talking to some people from Jamaica.
I'll get round to posting my 'cheating' recipes for a lovely red, using cartons of grape juice from the supermarket!
* If you want to try the Cooper's kits, it's worth knowing that almost all Australian beers are basically lagers, so although it may be called Australian Bitter or Pale Ale, it's not as we know it. (Thus the famous 'Victoria Bitter', which is really like a lager!) But yes, I have spent some time in New South Wales before anyone points out the delicious 'Toohey's Old', which I assume is the Toohey's Dark Ale in the home-brew kit form.
So I look forward to chatting to you all, listening to your advice and offering mine!
