hefe means yeast so hefeweizen means wheat with yeast in brew (not filtered ) and a hefeweizen can be very pale upto fairly dark , while a dunkel means dark but a dunkelweizen should be a little more bodied with a hint of caramel and esters coming through. (i would advise use wlp300 as other strains don't give enough esters such as wlp380)
There are several ways to achieve this you can use dark wheat malt or dark base malt or dark specialty malt , but care must be taken when using specialty malts so as not to overpower the flavour profile .
If you can get hold of it use some carawheat (weyermann) , if dark wheat is used only use up to 50% but pale wheat can be up to 70%. I've had a go at this but my recipe needs improving as too much flavour came through from the caramunich III and i wrongly used wlp380 .
