Anyone got an all grain recipe for erdinger dunkel recipe??

Have a feeling it would just be pale malt, wheat malt and crystal, but I've never seen a recipe. Probably hallertue hops.

Hefeweizen light wheat beer. Dunkelweizen dark wheat beer. Which one are you after? Either way, check out The Brewing Network, the Jamil show. Recipes for everything, as well as tips and excellent brewing knowledge

hefe means yeast so hefeweizen means wheat with yeast in brew (not filtered ) and a hefeweizen can be very pale upto fairly dark , while a dunkel means dark but a dunkelweizen should be a little more bodied with a hint of caramel and esters coming through. (i would advise use wlp300 as other strains don't give enough esters such as wlp380)
There are several ways to achieve this you can use dark wheat malt or dark base malt or dark specialty malt , but care must be taken when using specialty malts so as not to overpower the flavour profile .
If you can get hold of it use some carawheat (weyermann) , if dark wheat is used only use up to 50% but pale wheat can be up to 70%. I've had a go at this but my recipe needs improving as too much flavour came through from the caramunich III and i wrongly used wlp380 .

This is my next recipe , untested as yet.

Amazing!!! Exactly what I was looking for! You using wyeast or danstar? Oh have you got one resembling paulaner hefewesien?

i would say a paulaner is more whitelabs 380 but imo not enough banana (esters) for a dunkel so something like whitelabs 300 (if you've tried a weihenstephan full of esters) so for wyeast that's 3068 :thumb: i would use liquid every time (dried just ain't as good and i've done both )

carahell will do instead of the caramunich 1 , maybe even better and you could use choc malt but maybe drop it to 30 to 40 g

So 2.5kg Munich malt, 2.5kg wheat malt, Carahell instead of caramunich1 0.25 kg

Vienna malt for 0.15 kg Caravienne Malt (43.3 EBC) Grain 4 2.8 %

What could I use instead 0.05 kg Caramunich III
