Hi,

I brewed a Hefeweizen on the 5th. Unfortunately, I had a few technical problems (boiler cut off) and ended up with a lower volume than I'd hoped for.
The recipe I followed said I should get 23L and an OG of 1.052. What I ended up with was 19L at 1.062.

I pitched a smack pack of Wyeast 3068 at 14 degrees and have kept it between 16-18 since then.
The SG has stablised at around 1.014 and I'd hoped to get it bottled this weekend but it has quite a harsh 'smoky' taste / smell.

Should I just bottle it anyway or would it be better to give it another week?

Any advice appreciated.

Thanks

Have you got a spare FV to rack it off into? you might find the taste / smell dissipate once its in a new FV and not on the break material and trub. I'd give it a week or two in there to see if it improves before bottling. With it being a Hefe the low flocculation of the yeast will help you as there will definitely be plenty left when you add the priming sugar and get round to bottling.

If it was me I would just go for it and bottle... never really noticed hefeweizens improving with time.. the opposite in fact.
