Have you changed this recipe? I got one written down...just flaked oats, not malted, hop stand for citra and galaxy, then a dry hop,no 10 minute addition,Liberty Bell yeast....

I’m always changing it. Flaked is fine, last time I ordered flaked I received malted flaked. There was a 15 mins addition that is now 10 mins. Liberty Bell is good. Use either recipe for similar results, the latest is intended to be a little less bitter. I may go back to Liberty Bell.

I think I asked you about the IBU but can't find where I did!
Anyway...I put some numbers in the calc and just the magnum was giving about 45...the hop stand nil...

All is calm in the brew-shed this morning, all three beers bubbling gently. 🤗

I’ve ordered the yeast and candi sugar for the Belgian Tripel but that will take a few days to arrive so I might get something else on in the meantime. I have some California lager yeast so maybe I’ll get a lager on - or maybe another saison, I quite fancy another batch of my “Goofie” saison made with orange peel and Nelson Sauvin. 🤔

Goofie sounds nice🍺

It does - but thinking about getting my stocks up I’ll brew the “Goofie” when I brew the next batch of cardamom saison because I’ll need to bring up the temperature of the fermentation cabinet. I can’t do that now because I already have beers in there. So it looks like it might be a lager using a warm fermenting yeast.

Having decided on a lager - probably a Pilsner. I’ve been thinking about my recipe and this is what I’ve put together, views welcome.

BJCP suggest water with a higher proportion of sulphates for a dryer finish so I’m thinking maybe Cl:24, SO4:84, Ca:48. (0.05g/l chloride, 0.15g/l sulphate, 20 litres RO water). Not thinking of adding any salts to the sparge water.

The recipe is simple...

Czech Pilsner 6.3%
5Kg Pilsner malt
Mash for 75mins at 145F (62.8C)

I don’t have any German noble hops so it will be Saaz (with apologies to the purists).

60g Saaz leaf, AA=3.2%, 60mins, 26 IBUs

1/2 protofloc tablet at 10 mins
40g Saaz leaf, AA=3.2%, 10mins, 4 IBUs

(My gravity was a little low so I added 500g of glucose here)

22 litres in FV, OG=1052
1 pack California Lager Yeast

Keg on day 12, FG=1004

Apart from the less-than-ideal weather conditions for outdoor brewing, today’s brew is going to plan with 10 mins mash time remaining.

I went with the water profile above, adding 1g Chloride and 3g Sulphate. I hope it’s a good ratio/quantity because there’s no going back now.

That should be fine, the saaz will pop a little with that ratio I usually do 2 to 1. do you have a handful of Munich or melanoiden to throw in there?

Lager is now in the brew-shed. The gravity was lower than planned so I added some glucose. I now have 23 litres with an OG of 1052, looks clean and is a nice colour.

I decided to brighten up the brew-shed with a few plants 😂 It’s actually a poinsettia and needs to be in the dark to turn the leaves red.

Going right back to the photos in your first ever post in this thread, can I ask where you got those clear plastic covers for bar area please? Looking to get something similar for my outdoor BBQ/Bar/Brewing area.

They were from Amazon but are not available from Amazon now.

Looks like they might still be available from the original seller:

Great, thank you. Do you remove yours completely when not in use or roll them up?

Remove them completely normally although I left one fitted separating me from my closest neighbour while I’m at the bar (because of Covid).

I use these fittings...

The one on the left has a thread on the inside and the outside, and is drivein using a hex key. The M10 bolt on the right then screws into the inner thread.

This is the threaded insert in place
