Have I used the wrong water?

Hi,
I have been using Tesco's 5 litre Ashbeck still water for my kit brews but just recently they announced that they no longer stock the 5 litre containers so I had to buy their 2litre bottles instead. I inadvertantly used 20 odd litres of their sparkling water instead of still water to start a brew a week ago and am wondering if this will be OK or result in a throwaway.
Any advice appreciated.

Has it fermented ok? If so just let it finish and then see what it's like. The water is only sparkling because of added CO2 so if it hasn't affected fermentation it should be ok I think.

Plenty of 5ltr bottles of ashbeck in 2 express and 1 main tesco near me although it has gone up to £1.30 a bottle.
Fingers crossed your brew will be ok.

As Cwrw said I would wait and see

The question I would have, and I am no expert here, is about the presence of sufficient oxygen. In the early stages of fermentation the yeast needs lots of oxygen to help them reproduce before starting to ferment

I don't know if the presence of a lot of CO2 will interfere with this

Carbonated water is slightly acidic - pH of 3-4 or so. Not sure how that would affected the grain extraction.

I think the CO2 may have stopped O2 from being dissolved in the water - so perhaps it would have stressed/delayed the yeast from starting.

I'd wait and see - could be interesting!

From the OP I'm assuming they're 1 or 2 can kits being made. And it's a week ago so he should know by now if fermentation went off ok. I agree the CO2 might have inhibited the yeast but he should know that by now.

Many thanks to you all for replying.
Just had a look now at day 7 and it seems as if fermentation is ongoing and all looks OK. Wait and see appears to be the thing to do.
Perhaps, as the brew is carbonized I am wondering if it would be wise to reduce the amount of priming sugar before bottling.

Taste it and see if it's carbonated at all when you check the final gravity. I imagine it would be flat by now.

Thanks posters I have taken all on board and will wait and see the results when I open the first bottle which will be approximately 5-6 weeks from now.
What I will do though is post back on the outcome which may help anyone else who has done the same.
Many thanks.
