Hi. I have a 5G wine kit. Calafornia Connoisseur

The directions are ****. In the first stage is the line
Take the specific gravity before adding the yeast. For assistance reading the hydrometer see "Hints for success". Item #3


The Sachets are numbered #2,#3,#4

This caused confusion and I added #3 (Potasium Metabisulphate)

They talk about a package #5 which doesn't exist.

Have I destroyed the wine by adding Potasium Metabisulphate strait away. Can adding yeast still save the day.
 
Probably. Have you added the yeast yet? If not, maybe giving it a few days for the pot.met to dissipate might just save the day. Campden tablets (same thing) are often added to 'country wines' a day before adding yeast to subdue undesirables before adding the yeast safely. Someone will know better - be patient and don't tip away just yet!
 
I've added Camden tablets to elderberry wows, then yeast the next morning and that is fine (should be 24 hrs between really)

If you've added stabiliser though, you are screwed.

As gunge says, wait a while then add the yeast.
 
you may be OK actually - My Cal Con kit came with two sachets..

1. SODIUM METABISULPHITE (CT) to add when degassing to prevent oxidation, etc
2. Potassium Sorbate E202 to add before bottling - (stabilizer)

It's the first you've added I think (from my notes...."The main difference between sodium metabisulfite and potassium metabisulfite is that one will leave residual amounts of sodium in the wine and the other some potassium. ... Campden tablets are nothing more that potassium metabisulfite in tablet form".) ,

I'd wait 24 hrs, and add the yeast.

If you've already added the yeast, you may need to buy some more..

When @richytrue killed a muntons kit, it was Sorbate he added.
 
Metabisulphate is an antioxidant and will hinder yeast, but it's effect diminishes over time - hence the 24hr gap between adding it and the yeast in country wines. Sorbate prevents the yeast from reproducing. So if it's the latter that's been added, it's curtains.
 
I would give it 48 hours stir it up a few times a day to release any gas then then add more yeast and nutrient, i would be surprised if it doesn't start up.
 
Of all the wine kits I've made the CC kits have the clearest instructions of any, as long as you didn't add packet number 4 you should be fine just give it a while as mentioned above, i have no idea how anyone could confuse a hydrometer for a packet of chemicals:confused: Please don't confuse anything else or it could be fatal.
 
Well it's been a few days wonder if he got it restarted?
