Out in a bar in Spain at the moment and i keep seeing this phenomenon with different lagers on tap.
Estrella is the worst for it but Back home Tennants lager does the same.
As a fresh pint sits the head grows up out if the glass to resemble a mr whippy icecream. Im wondering how brewers achieve this. Is it an additive?

it sounds like they are serving in nucleated glasses.



My guess is the hot climate making very cold, strong protein bubbles expand?
what are strong protein bubbles?
 
All natural 'foam' is created from proteins. Which are stretchy. In a commercial beer this ought to be bang on.

I like the glasses idea. Probably a bit of both.
