I'm returning to wine making after 25 years, having reclaimed what's left of my kit from my Mum's house. In the process of getting a few bits and pieces then I'll give it a crack. I used to do a fair few country wines plus kits. I seem to remember doing a birch swap wine tapped from the tree. I hope to start with a fruit juice based one to get the ball rolling.
