How long do grains keep.

I.e if I used 50g of a 500g bag and chucked the remainder in a plastic bucket?
 
You are best keeping in a zipped airtight bag, it should last months, my bags of crushed pale malt usually take me 6-12 months to use and are fine I don't think I have ever had a bad brew from stale malt.

Just to let you know, all them bottles, the labels are a PAIN!!! I have ended up creating my own label that is the same size as theirs ha

Even after soaking and sterilising the glue is still there!
 
People tend to say that grains have a shelf life of 1 year, while pre-milled grains is about half a year.
With that being said, there is no real problem using the grains after this amount of time. To be on the safe side, i have decided to follow that rule, and to keep the bags air tight.

I would not recommend storing the grains in a bucket. It will probably lose some of its aroma over time, and you risk getting bugs or mice in there.
