While I agree with what you say about the malts, I'm not at all sure that US hops are non-negotiable. If we accept that AIPAs are a style distinct from historic IPAs, we can still use things like Galaxy and Topaz and a whole spectrum of NZ hops. I've got some African Queen in the fridge, which I bought out of curiosity and I'll bet that makes a cracking AIPA. Nectaron, too, should be a safe bet if I can lay my hands on any.i thought about this. A lot of us IPA recipes use two row and Munich, but I guess if they had cheap and plentiful access to Maris otter for example they would use that much more. So whilst US hops are non negotiable, we can probably add more complex flavours with English or european malts (and yeasts) Compared to US examples.
