Have following ingredients kicking around – Any suggestions for a recipe for this coming weekend as not got time to make any purchase of additional grains?

Wheat – 2.5kg
Lager Malt – 1kg
Munich 1kg
Black Malt – 450grm

Hops – Saaz, Perle, Goldings, fuggles

Yeast – S04, S-33

Was thinking of combining the wheat, lager and Munich with the Perle to make a Wit (have the coriander and orange)

If you're AG I would suggest you need some more malt with enzyme capabilities. If I remember right, the Munich will convert with help from something, the black malt won't, and I'm not sure about the wheat.

As you say, you seem to have the makings of some sort of wheat beer, if you could get some more base malt (lager or maris otter) tat would be good, otherwise it might be a bit thin.

If you're going to add sugars and work with what you've got in a mini mash, maybe do it at say 68 degrees to keep a bit of body, as the sugar will ferment out completely, particularly with the S04.

Like the orange, I dropped the zest of two oranges into the end of the boil of a lager using a citrus hop (can't remember which) and it worked a treat.

Good luck. Hope to hear how you get on.

Hi Shoemaker.. :D

If it was me and its all i got two possibilities...

A bitter or a mild..

The bitter use all the pale malt, 4% black malt, 5% wheat ...golding and or fuggle 45 IBU

The mild all the pale male 10% black malt 10% wheat... Golding and or Fuggle 30IBU

So4 only because its uncomplicated.. :thumb:

Simple but to the point of a traditional English Pint ..

Good Luck

Throw 100g of the black malt in and you're on the way to a Dunkel
