I made up some fiery ginger beer last week and it has nearly fermented. I decided to up the amount of lemon and limes used to give it a better flavour. It tastes great but it is far too acidic. Just wondering what I could add to bring it down to a more palatable taste.

Cheers Neil

Give it to me and I will dispose of it in an (un)controlled and (dis)orderly manor!

I'm looking to make this myself but the recipes I have seen so far it all seems rather faffy. I would like an alcoholic one like Crabbies how did you make yours, can you post recipe for me cheers

I made some a liitle while ago...

850g of ginger
juice of 1 lemon
1kg sugar
300g jar of honey
9lts bottled water
primed with half teaspoon sugar
sweetened with 1 tsp of splenda

it turned out nice as **** and about 5.6%

Thanks for the reply Sam :thumb: .

You could be right there mate, I will give it a try. I also bought some precipitated chalk to see if that will bring it down also. With both, I'm sure it will work.

Cheers Neil
