I have the above on order, however I was thinking of adding some Munich (500g ish) to the 5.6 kg grain bill of Marris and Crystal, to give it a bit more of a biscuity finish. Any thoughts on if this might work?

Munich is perfectly interchangeable with base malt, should add a bit of body/colour without sweetness.
Up to you whether you wanted to substitute some MO, or just have 10% more ABV.
