Yes you can, and it's usually claimed that wine matures better in bulk as it's less susceptible to temperature fluctuations.

The jar needs to be topped up to the neck to minimise oxidation. Keep it under airlock and check from time to time that the trap hasn't dried out, or use an undrilled cork but don't ram it home too tightly. You can also buy safety bungs, but I would never use an undrilled rubber bung, just in case.
