Hi i brewed a guinness clone yesterday pitched yeast at 23deg(so4) 9oclock last night ,this morning temp has risen to 27deg over night its droped 12 points as well :shock: in 9 hours :shock: will there be any off flavours ect with the high temps i have got temp down to 20 deg what should i expect ?

Hi Anthony,

Some stouts really do ferment fast (sounds like you had lot of yeast nutrients and it was well aerated :clap: ). Fast ferments can get generate quite a lot of heat as you have found out!

SO4 is a 'good yeast' and I would not expect you to have problems with taste in a stout despite the high temp overnight - apart from which, the roasted flavour will probably dominate anyway.

It'll be fine :thumb:
 
There are award wining commercial breweries that ferment with SO4 at 26C, so they must be doing something right.
 
Yep - quite right - get a beer and let the yeasties work their magic :cool:
