My third batch of black pudding loaves, I have tweaked the second and this batch and I am just about home and hosed I reckon another couple of pinches of salt will do it. I read nutmeg is a substitute for mace, but it isn't I now have extra mace in the recipe and pepper. The firmness of the black pudding is a lot better, I can carve it as thick or thin as I like and it stays firm.
