So I made a lager with S-23 back in March, pitched two packs and harvested off the top once it was going. I made a starter from that, poured off the beer and topped up with boiled water. It's been in the fridge ever since.
Six days ago I got it out, poured off the water and added some wort. Slowly and steadily it came back to life and by yesterday morning I had a nice crop which I pitched to the lager I made the same day.
This morning I had a look in the fridge (I've got it slowly cooling to 12C) and the sides of the fermenter were dotted with yeast, all the way to the top.
The lager I made the first time ended up very clean-tasting too. It took three months to get there but it was worth it.
In short this is a very sturdy yeast, and (IMHO) makes pretty good lager :-)
