Hi Guys

Ok im going for the first full extract brew week after next, after reading the GW real ale book iv decided to go for the Arkells Kingsdown Ale. Have any of you tried this one?

Questions. :wha:
1, What are your opinions on syrup vs DME? I think ill try DME first as it is easy to store and weigh. What is the preferred method of extract brewers on this site?
2, What yeast should i use for this brew? iv only ever used yeast supplied with a kit before.
3, Can i substitute the white sugar with more Malt extract?
4, My hops have been in the freezer should i defrost these before adding or can i just whack them in :-)

Going extract soon as well. From what I have read liquid is better than spray but it needs to be fresh otherwise use DME. When it comes to storage I know that the DME keeps better but you need to try and keep it dry. The liquid oxidises so if you bought 25kg of it it would not be so good when you reach the end.

Yeast wise I would go for Nottingham, us04 or the like unless you want to spash out on liquid yeast?

I am sure you could substitute the sugar for extract but GW says in the intro that the recipes are designed to be as close as possible to the beer they are cloning. Sugar will be used to dry the beer out a bit and boost abv so by using extract instead it will not be as similar.

As for the hops just bung them in :thumb:

Yep, same answers from me as well. DME is the best way to go. "Worcester hop shop" does 1Kg bags of dme for £4. think this is the cheapest source i found. Just bung the hops in frozen and S-04 would be my choice of yeast. It is many peoples go to yeast. It compacts down well.
 
Cheers guys, i had no idea that standard sugar did that to a brew. ill stick to the recipe and see what happens. Im going to be ordering all this in one go so an extra £3 for liquid yeast is no biggie. Im torn between Wlp037 and wlp005 both sound as like they would compliment the beer well.

Arkells Kingsdown Ale - 19 Ltrs
Malt extract 2420g
Light Crystal Malt 525g
White Sugar 88g
Black Malt 18

Start of boil
Fuggle Hops 26g
Golding Hops 22g

Last 10 min
Golding 16g
Irish Moss 3g

You can talk to the lab about your yeast, they even offered to make a starter for me at no extra cost!
Just be cautious about posting a recipe from a book, it might be subject to copyright.

They are good recipes, I've had great success with TTLandlord, XXB, Directors and just done Bass Draught Bass.

Ah good point Guy, i have now removed from my original post. They have the Yorkshire yeast i was after so i might give them a call. I was going to try the TT Landlords but wanted something iv never tried before with a bit of a stronger taste to kick this off with. There is a TT pub pretty much outside my work its a shame there is not a Ram Tam clone in that book its a cracking beer i would have loved to try that one.

Kingsdown Ale, originally brewed to celebrate the mighty Swindon Town winning the league cup in '69.

...that puts it on my "to brew" list then!!

Come On You Reds!!! *cough* 'scuse me...
 
yeh i read about that on the website. any body know of a beer that commemorates the proper Reds success...... by that i mean the mighty Manchester United :clap: It would have to have a truly great head (fregie), some home grain talent, some hoppy flair, a strong finish :rofl: and of course have a red colour :party:

If anyone can knock me up a recipe for that ill brew it for when we win the league this year :tongue:

And probably the most EXPENSIVE ingredients on the market. !!!!!!!! :eek:
 
Matt, can't you go anywhere without mentioning your bad taste in football teams?

Good luck with the brew, save me some. Your first batch of bottled beer was pretty good. Name it next time :cheers:
