I just tried my first ever attempt with Safale S-05 and had heard tales at how vigorous it can be. However, I'm a bit worried that it may have been a bit too lively and has now made a break for freedom:
As you can see, it's completely burst through the airlock and the sediment on the top of the FV is very thick; almost a mayonnaise-like texture (notice my housemate's much more refined English S-04 yeast on the right in teh top photo and see how well-behaved that is!).
My concern is, have I topped the FV up too much and will there be enough yeast left to finish the job? It's been in there for just over 48 hours now.
