Hi all,did an old perculier 3rd nov from gw book followed recipe exactly only got og of 1050 instead of 1058.pitched yeast so4 which started pretty quick went off like a train for a week,now it seems to be settled at 1011 after 13 days in fermenter, bubbles about once every 5-10 mins,as i have a reading of 1011 for last 2 days is it finished or should i leave it little while longer, if finished it will be nowhere near to strength it should be will there be any issues ie taste lack of body etc.

I would say it was finished. I would transfere to a clean Fv prior to bottling or kegging.

I would say that it will still be a tasty beer. I had a London pride clone which the first time I did it was 5.4 full of body etc, the second time I missed the fg and ended up with a ber at 4.8% It isn't as good as the first by a long shot but still an exceptionally good beer. It lacks some of the body and mouth feel but this is could be due to other factors like the mash etc.

I would give it a couple of months in the bottle and I think you will have a very good beer just perhaps not quite what you expected.
 
thanks for your reply graysalchemy will leave till tomorrow to bottle,i know the longer its left the better the beer but iv'e always started drinking my beer after about 2 weeks and has been very nice, is this particular brew any different. :wha:

It will definitely taste better after 2 -3 months especially as OP is quite a complex tasting beer. Time will always make a good beer great as beer is a living thing and is in a state of flux and many reactions go on once the beer has been bottled.

Do your self a test taste it in a few weeks then taste it again in a month and I will guarantee you will notice the difference. I always try and give my beers at least 6 weeks in the bottle before opening and quite often it may be 5-6 months old when I finish drinking a batch.
