I would like to know if it's possible to do three stage fermentation , stage 1:ferment for first week as normal, stage 2:syphon into new fermenting bin and ferment for second week, stage 3:transfer into bottles on week three, would it also have less sediment doing it this way...any ideas

Yes you can! What you describe is a 2 stage ferment, also known as a secondary because you are technically conditioning / carbonating in the bottles, not 'fermenting'. There are loads of threads and options on this. Mainly to do with whether it actually makes for a better béer or not vs risk on contamination due to the extra transfer. My opinion is that if youre making a beer less than 1060 SG you don't need to do a sceondary, leave in primary for 2 weeks. Have a look at older threads for all info.
