Fennel Wheat Beer?

I have been wanting to try brewing with fennel for some time now. I often use the seeds when I bake bread, and think that if it goes well with bread it should go well with beer!

I'm going to use a modified version of a Clown Juice clone Wit style beer I currently have fermenting, with some hops I have left over from previous brews.

What do you think to this partial mash recipe?

Recipe:
2kg Torrified Wheat
0.25kg CaraPils
0.25kg Maris Otter
2kg Light DME

25g Amarillo 60mins
25g Hallertau Mittelfruh 15mins
15g Saaz 15mins

35g Lemon Peel 10mins
10g Fennel Seeds 10mins
15g Corriander Seeds 5mins

Boil Volume 14litre
Batch Volume 22.5litre

Estimated SG 1.053
Estimated FG 1.013
Estimated ABV 5.3%
Estimated IBU 17

Yeast WYeast 3944 Belgian Wit

What do you think?
 
Hi , lemon tends to ruin the head on the beer however i do like the sound of this . If possible use flaked wheat instead of tori as it can give a wetabix flavour while flaked will give a lovely smooth creamy taste . Good luck with it .
