Extract brew with some Caravienna malt...

Hello

We have been advised to create an extract brew but add some Dingemans Caravienna malt (http://www.themaltmiller.co.uk/index.ph ... ductId=302) to the boiling spray malt... We will filter out the grain when we transfer to the fermenting bucket. By adding the Caravienna I am told it will increase volume and taste to the brew. My questions are 1) is this a good idea / have I understood what I am being told here and 2) at what point do I add the Caravienna ?

We would normally boil the spray malt for appx 1 hour.

We are looking to use 3kg of spray malt and 500g of Caravienna (with Citra and then dry hopped with Nelson Sauvin).

Any advise would be mucho appreciated.

boiling that quantity is a bad idea, it'll create tannin and stuff. you can get away with it for like 100g additions, but any more and I wouldn't...

instead, heat some water up in a pan to 70c, a few litres at least - then dump the grain in there for half an hour, wrap it up in blankets to insulate, then after that 30 mins strain the liquid off into your main wort (spraymalt/water solution) leaving the grain behind, and boil the lot together.

depending what style you are going for I would say 500g is probably quite a lot. In IPA type beers with crystal I'll usually use about 250g.

what you suggest about how to treat the caravienna, is that called 'steeping the grains' ?

and what quantities of spray malt / water / caravienna / brewing sugar would you suggest ?

we would like 20 litres of strong hoppy ale.. We quite like 9% beer.
 
yep, steeping - mini mash - etc. it's really just extracting the flavour.

you won't get anywhere near 9% @ 20L with 3kg extract. 3kg in 20L will have your OG at around 1.055 which is 5.3%ish. If you want stronger beer, then it's sometimes better to cut down your final quantity. 15L with 3kg extract will have you at 7.1%ish...

I would bugger the brewing sugar off, no point making this much effort and ruining it with cheapo sugar...

assuming you have the space to boil up your full volume, here's an idea for a 15L recipe.

we did what you suggested.

we now need to dry hop the nelson sauvin. but now before we add the nelson it smells amazing.

will let you know how it tastes.
