would the long boil remove the berry fruitness of the Pacific Gem. or does it work like that

Well it should . . . I've been using a portion of Pacific Gem in a lot of my beers this year (to use them up more than anything) and the one flavour that I have noticed that has been persistent is an orangey marmalady one . . . I've not associated it with PG before, and as I've used Bobek in some of them it could have come from those . . . but not in this pilsner. I'm going to have to wait and see what the lagering does to the beer, taste can change dramatically once it is truly clear.

Well if you really want to drink it that young you can do :rofl: . . . I'm planning on opening mine for Christmas 2010 . . . hopefully it will have just mellowed by then :lol:
 
Hi All,

this may be my last post for a few weeks, but I thought I would take the opportunity to post a more or less final update on this beer.

I have been sampling the 9L corny of this, which has had no lagering aside from that provided by the fridge with the big blue roof, to check on progress. and here is the "Feck Test" ( . . . you should have patented that one Vossy :D . . . ) although I guess I am just posing with getting three 'Vossies' in the one image :lol:

It's still not crystal clear, there is a slight yeast haze, but with lagering I am sure that will pass . . . the other three cornii are in the Kegereezer (TM) as I type and have been there for a week at -1.5ºC, I may give them another week or so before I bring the temperature back up to 8-10ºC for dispense . . . it depends on how long I can make this mini corny last :) Taste wise, its clean, with no hint of that orangey taste I was worried about earlier, definitely bitter, perhaps too bitter, which could indicate that I have removed too much diacetyl which is needed to balance the high hop rate in a boh pils, although that could fade with lagering . . . I suspect that I need to bottle some of this otherwise even with three kegs very few people are going to get to sample it ;)

Time for another beer I think

I would just like to say that this beer has turned out right f*ckin nice (*) . . . . It isn't a 'lager' this is a beer on steroids . . . and Sorry BrewStew you won't like it . . . I put a hop in it while I was making it :rofl:


(*)Which probably means this corny is about to run out :cry:
