I brewed two very different beers at the weekend, both fermented with st Austell proper job yeast, both 8L BIAB. A bitter aiming for about 3.5% and a NEIPA style but aiming for a lower than style 4.8%. Brewed on Friday and Saturday respectively and by Tuesday they were down to 1.010 and 1.014 respectively which indicates they are done, and today on Thursday they are both still at the same gravity, both taste good and both take a fair while for the carbonation to drop off in the sample jar to get a good reading. So my questions - 1. Would you bottle them now or wait a week? And why.
2. I’m thinking of bottling the bitter without any sugar, as it looks very carbonated as is and I would like to keep to a fairly low carbonation. With the NEIPA I’m tempted to add just 1.5g per 500ml bottle, rather than my normal 3g after 2 weeks in FV.
