Hi all,
I'm planning to brew a dubbel in the new year, and have put the following recipe together. I'm not sure about the hop choice in particular so any feedback is welcome.
Dubbel
Og: 1.063, Fg: 1.011
Fermentables
Pilsner Malt - 88%
Munich - 4.6%
Special B - 4.6%
Dark Candi Sugar - 2.8%
Hops
Mittelfrueh - 20 IBU @ 60
Yeast
Fermentis Be-256
 
Drop the Special B, or decrease it to 1%. I have used this amount of Special B in heavier beers, and it leaves a a trace of roast bitterness. Increase your dark candi sugar to 15%, and decrease the pilsner malt. You can go to 26-28 IBU, without problems. With the BE-256 you will probably go to a FG of 1.009.

Oh, and for the hops, use a bittering hop for 20-24 IBU from 60 minutes, and add some hops for the last 15 minutes too.
