Just picked up a Coopers English bitter recommended in another post. The instructions say to use 500g of dried malt. The guy in my local HBS suggested using a liquid malt (1.5kg), and to use the whole tin. Is 500g of dried malt equivalent to 1.5kg of liquid malt?

I am no malt extract expert but that is not my understanding. You would usually expect to use 25% more Liquid Malt extract against DME so the instructions from the shop are not correct. Given that there may be some confusion.

Most one can kits tell you to use 1kg of sugar to compete the wort. If you use 1kg of DME you will get the alcohol and also add some body and generally make a better beer. Now 1kg of DME and 1.5KG of liquid malt extract is not too far off (a few percent over) so perhaps he was thinking about normal 1 tin kits. However, your kit has asked for 500g for DME so you would be looking for nearer 700g of liquid malt extract.

Most Coopers kits ask for 500g dried malt extract & 300g brewing sugar, though I use 500g DME & 500g sugar.

A 1.5kg tin of liquid malt extract is pretty much the equivalent of this, and should make a very good brew
