Hello all,
I've got two Wilco kits I picked up cheap..a hoppy copper for £6 and a Cerveza for £8. Liquid and dry malt on order from the Malt Miller. Plans are to brew each with 1.5kg of liquid or 1kg of dry plus to try dry hopping about 5 days before bottling, using, for ease of use,the hop teabags, that are available. Any suggestions as to hop type/quantity for these kits or any other tips..

cheers

Assuming the cerveza is a 19 litre batch then saaz. Lots of saaz. I would go 50-70g. Depends how hoppy you want to make it. But with saaz you can't really over do it.

I always do the hoppy copper with golden syrup and dry hop for 5 days before kegging with citra or cascade, comes out lovely every time but for some reason gives me a temporary red rash on my neck and cheekbones

I've done the Wilko Cerveza with Aramis, the Hoppy Copper with East Kent Golding and their Delicate Pilsner with Perle and liked them all. I do think the suggestions made for Saaz and Citra are right on the money, I've got a Hoppy Copper to do and I'll be adding Saaz to it for my next brew. I've really liked the Wilko kits I've done but I think they all really benefit from hop additions and a tweak to bring up the ABV I'm sure the Golden Syrup would be lovely with either one or both of them.

Thanks for the ideas! Should I brew them short even with the syrup addition? How much syrup should I use and with 1.5 kg of liquid malt, what should I expect in terms of taste and abv? Would simco work with the cerveza or is the saaz more suited with it being lager?

I did a hoppy copper with-
150 gm crystal malt
25 gm carahell
both steeped for 30 min in 5 litre water and rinsed/sparged with 3 litres water.
Brought to boil for 40 mins added 400 gm spray malt and 27 gm challenger hops at start plus another 10 gm challenger at 30 mins. added 25 gm styrian goldings at turn off and cooled in sink.
Strained into FV with 25gm golden syrup and a further 150 gm spray malt, topped up to 18 litres with cold water.
came out at 3.8%
Think it would go well with pretty well most hops,so use what you will,i did not dry hop this one but would have used more of the styrian goldings if i had. It's actually not very hoppy at all on it's own so go for it

Thanks! I think the hoppy copper will get the citra and cascade plus 1.5 of liquid malt and a jar of syrup. The cerveza. .still not sure..

I have done the Wilko cerveza twice and both occasions I brewed to 21ltrs, and added 1KG of brewing sugar along with 500g of LME. I dry hopped with aramis, initially with 10g and secondly with 20g.

On each occasion it has turned out very drinkable, better once bottle conditioned for approx 3 months, but there wasn't the hoppy aroma and taste to what I was hoping for.

Next time I will cut down on the brewing sugar by adding 700g along with the 500g of LME and replace the Aramis with 20g of Cascade and 20g of Amirillo (both of which I have in my cupboard).

Hope this helps.
