I pour back but usually leave a little sip at the bottom when I'm going to bottle just to try only take readings to find out ABV as I'm sure all my beers are well finished after 3 weeks in FV
 
I normally have a sip of the initial sample and then drink the later samples just to see what it's like. Plus I take them from the tap so the only time the lid is opened is to dry hop.
 
I drink it, I like to monitor the changing taste as the wort ferments into beer. After taking the OG I test it a week later and then at days 13 & 14 as it's usually done by then. The next taste is a bottle after 2 weeks in the house and 2 weeks in the shed, after that it's about patience, and I do always seem to be running short of that.
