Quick question -
I need to add 2 litres of water to get my lager back to intended volume/OG as I lost more in the boil than calculated for. It's in the fermenter now, so does it matter if this is done once fermenting is over and I am racking it or will I end up with watery tasing beer?

Let it be I say - it'll just be a tad stronger and may be better as a result!

when learning its quite hard to hit your targets, that comes with experience and learning your equipment. Go with what you got......
Its possible and safer to add liquid when your brew is in the fermenter and before the yeast is added, take a gravity reading and see if you can add without diluting the brew too much. Otherwise make a smaller brew this time.

I've added water to my beer in while in the secondary quite often.

Sometimes your volumes are off or your efficiency is better than expected and you end up with wort having a higher than expected original gravity.

One can dilute the beer with no ill effect but keep in mind at this point in the fermentation process the addition of oxygen it not recommended.

To avoid introducing oxygen at this point one should boil the water first to drive off dissolved oxygen. Once the water has cooled carefully add it to the fermenter with the wort. One should avoid splashing as much as possible while doing this. Ideally one should use a racking cane etc. though I often just carefully poured the water in.

Cheers,

Scott
