Did a suprise holiday ruin my brew?

Evening all hope you are all well,

Quick question - Due to a suprise holiday and work commitments by brew has sat in the primary fermenter for 15 days :shock: . It is a seal fermentor with an air lock and has not been opened all this time apart from a gentle stir on day 2. I have no idea whether this is still going to be ok? any advice?

I'm not daft enough to bottle vinegar but some advice on what to look out for would be helpful?!?!?!

Also what the longest you could leave it? I'm planning on bottling tonight

I've left beer longer.

Some people say 14 days max - but i've got away with twice that.
 
Been having to leave mine for 21 days recently to ferment out. Beer is fine so I would not worry about it.
 
Your beer will probably be fine GB, as other have said :thumb:
One of the main problems with extended time in primary is that the 'spent' yeast start to decay* imparting 'off' flavours to the beer. This is more of an issue when the beer has been stored warm, though it will eventually become an issue, no matter of the temp.

* simplification of very complicated reactions :D
 
Hi all,

Sorry for the long delay!!! suprise work loadthis time :cry: !!!.... I bottled the beer straight after the first positive response.. i had a sneaky 1/4 pint straight from the FV and it tasted fine. :roll:

I'm assuming that there will be some yeast in suspension left to bottle condition my beer? I'll try one (or two I hope) in a few weeks and let you know... i'm keeping the rest conditioning until Christmas.
