I used to use a lot of this stuff ,EDME by choice ,but cant seem to find it these days .EDME sold it through their Tom Caxtons identity that has gone belly up and I cant find it listed at EDMEs trade site ,or the other big maltsters sites either.

I had read that diastatic extract had gone out of use as the grains available on the HB market didnt need the enzymatic boost that they had in the past due to improved quality .Is this the case ? And has DMS disappeared ?

Further ,EDME dont list the plain extract syrups that they once did ,only two trade ones....are these gone too ? I also noticed the trade site listed band dried malt extract....how available is that and is it any good for us ?
 
If you're mashing, some grains have diastatic power (vienna, wheat for example,) some don't (amber, chocolate.) The common solution is to mash a grain that needs a boost with a grain that doesn't - 500g wheat, 500g amber for example - then the rest extract, if you're a partial mash brewer.

DME and LME are both still available. DME tends to only come in a few forms and be from one grain - my LHBS only sells Light and Amber - whereas LME is often a combination of malts (thomas cooper's, for example) and is listed as "light," "amber," "dark," etc. you can probably find the ingredient lists online. some places will sell extracts from specific grains, but usually in bulk :)
