Hey guys, half-term is here and I'm planning on brewing a hoppy as hell pale ale.

I have some pilsner malt and was planning on using this (4.5kgs) plus a little bit of crystal and cara red to get a nice rouge colour. How much should I use?

Hops are Slovenian and from the competition run by Geterbrewed:

Wolf for bittering

Styrian Cascade for aroma

I might also steep some Simcoe at flameout.

What do we think?
 
The yeast has kicked off and the krausen is fluffy on top of the wort/beer.

I'll share a life-lesson with people from yesterday's brewday:

When your pre-boil gravity is a little shy of what you initially wanted try to resist the urge to pour in DME as the pot is approaching the boil; a Vesuvius-like eruption of boiling wort surged out of the pot and covered the whole stove area.
Being a naturally cowardly person I had just had time to turn off the gas as I saw what was about to happen and, while swearing loudly and profusely, opened all the windows and doors of the kitchen. My fear wasn't that I'd potentially ruined the stove-top but was far more primal; SWMBO was on her way home from work!
I did a Winston Woolfe and frantically tidied it all up, though I must have lost about two litres.

Just say no, kids. :whistle:
 
Same thing happened to me while boiling up some water in a little pan for a starter on Saturday. Luckily, Mrs Halfacrem was upstairs hoovering the bath or something, so didn't hear my screams and profanities!
