Dehydrator not big enough

Hi, my cascade plant looks like it just about ready. Today some of them are just about turning slightly brown on the edges. Trouble is I think there are too many for my food dehydrator. So the question is do I harvest all of them now or just enough that fit in the dehydrator. If I harvest all of them how do I store the rest until there's room in the dehydrator. Also do I dehydrate at high temperature or low and for how long.TIA

I tend to go low and long in a dehydrator, then vacuum pack. 40c ish.

Do you have a fan oven?

The answer is to harvest them when they are ready.
