As an update, I opened a bottle of the red last night. It’s been resting on the cork in the bottle for just over 5 months now, and I have to say that it’s very drinkable. It certainly didn’t taste or look like a 11% wine! It had a nice deep red clear colour, it was medium bodied and went very nicely with my late dinner. I’m so glad I have a further 25 bottles of this and think I’ll doing another one of these in the near future.
