Cwtch oops bad choice

Was looking for a Red / Ruby kit and got Cwtch and St Peters

Just removed Cwtch to garage and its so Bitter [hoppy]. My Wherry, Nelsons & Admirals are right up my street taste wise and had I read some of comments on here [that I found today] I would have avoided it.

However I just saw "red" "brilliant" "great beer" etc - so its in KK now and can stay there lol but seriously will time mellow it as some reviewers suggest and what might that time be , 6 months or maybe more. Probably made it "worse" by putting in second set oh hop pellets on day 4 when I should maybe have waited a few days as I barrelled on day 4

Ive been brewing since 72 and never had an infected one and considered whether this may be my first but it looks fine and bitter didnt seem to be a symptom - or is it ?

Luckily I have 3 neighbours who will drink "owt" if all else fails ..... cheers for any input / advice
 
It should mellow with time. You shouldn't need 6 months. Moreover, if it was a bit cloudy when you barrelled it, it should be a bit less bitter when it's perfectly clear as the yeast tends to trap the bitterness.
 
Yes thanks for that - it was pretty clear but I see it has an IBU of 38 and now Im looking for Barnsley or Nelsons for comparison purposes

Had never heard of IBU till 15 minutes ago :beer1:so will keep digging

Maybe just not to your taste but I've absolutely loved this kit and have made it twice.

I followed the instructions about adding the first lot of hops in with the hot wort (i.e. the cans + boiled water) and letting it steep a bit before filling up with cold. The second hop addition I add after two weeks fermenting, then leave it for 2-3 days, cold crash for a day or two, then keg. Stayed quite clear when I did that.

I think you are right re the taste as I am mainly a Bitter fan as in Barnsley Wherry etc and the Cwtch made me cringe but the good news is after just a week I dropped a small amount out of KK and once it settled I was "chuffed" to find it had mellowed VERY noticeably so a few more weeks hence I expect to like this

i didn’t like it at all. Just not a fan of overly hopped bitterness - I find it almost cloying on my pallet.
